Sometimes you just need a fresh, fruity, and bubbly drink to brighten up your day. This smash of a cocktail is just that. It is so refreshing, and the aroma from the thyme, apples, and Prosecco is simply delightful. This cocktail would be perfect for a lighter thanksgiving treat. Also, what is brunch without Prosecco? This will surely be a fan-favorite if you are hosting brunch at your home. This is one you MUST try!
Ingredients (2-4 servings):
1 large Apple
8 Thyme Sprigs
8 tbsp Apple Thyme Simple Syrup (1/2 Cup Water, 1/4 cup of Honey or Organic Agave Nectar, bring to a boil, remove from heat, add 6 thyme sprigs and 3 apple slices, stir, and let cool)
1 Bottle of Prosecco
Peel and slice your remaining apple and plums.
Muddle your apples and plums with your simple simple syrup and juice from one lemon. Muddle until all juices are released from your fruits.
Shake mixture in your cocktail shaker with ice.
Pour mixture evenly between your glasses over crushed ice.
Top off with Prosecco (fill to the rim). Stir.
Garnish with apples or plum slices and thyme sprigs.
