This recipe came together over the years from a collaboration of input from my family and friends. In my opinion this is the BEST game day dish. The combination of white Velveeta and spicy sausage is very addicting. Every time I make this Ro*Tel dip everyone asks me, "how did you make this?" I always tell everyone it is so easy! Your friends will literally stand around your crock-pot waiting for the cheese to melt because they are so anxious to taste! Happy game day!
2 cans Rotel® Original Diced Tomatoes & Green Chilies 10oz
1 can Old El Paso® Green Chiles Chopped 4.5oz
Velveeta Queso Blanco
1/2 Coors Light (or your favorite beer, just something light)
Set your crock-pot to high heat.
Then, brown your sausage. While your Sausage is browning, cube your Velveeta Queso Blanco.
Add your cheese, green chiles, Ro*tel, sausage, and half of your beer into your crock pot.
Let your cheese melt for about an hour and a half.
