Zucchini and Pepper Shrimp Pasta
During the week I like making simple, but delicious meals. This may look gourmet, but this stunning meal is so simple. Not only is it super easy to make it very healthy and filling.
1 pound of shrimp- peeled and deveined
1/2 cup cherry tomatoes
2 zucchinis, spiralized or grated into long “noodles”
1/2 tsp red pepper
1/2 yellow pepper
1/2 cup chicken broth
1 lemon juiced
4 cloves of garlic
2 tbs olive oil
1/2 tbs red pepper flake
2 tbs grated parmesan cheese
Add olive oil in a large skillet over medium high heat. Add shrimp, garlic, tomatoes, red pepper, yellow pepper and red pepper flakes. Cook, stirring occasionally, until pink, about 2-3 minutes.
Stir in chicken broth and lemon juice; season with salt and pepper, to taste. Bring to a simmer; stir in zucchini noodles until well combined, about 1-2 minutes.
Serve immediately, garnished with Parmesan , if desired.
