Zucchini and Pepper Shrimp Pasta

During the week I like making simple, but delicious meals. This may look gourmet, but this stunning meal is so simple. Not only is it super easy to make it very healthy and filling.



  1. 1 pound of shrimp- peeled and deveined

  2. 1/2 cup cherry tomatoes

  3. 2 zucchinis, spiralized or grated into long “noodles”

  4. 1/2 tsp red pepper

  5. 1/2 yellow pepper

  6. 1/2 cup chicken broth

  7. 1 lemon juiced

  8. 4 cloves of garlic

  9. 2 tbs olive oil

  10. 1/2 tbs red pepper flake

  11. Salt/pepper

  12. 2 tbs grated parmesan cheese


  1. Add olive oil in a large skillet over medium high heat. Add shrimp, garlic, tomatoes, red pepper, yellow pepper and red pepper flakes. Cook, stirring occasionally, until pink, about 2-3 minutes.

  2. Stir in chicken broth and lemon juice; season with salt and pepper, to taste. Bring to a simmer; stir in zucchini noodles until well combined, about 1-2 minutes.

  3. Serve immediately, garnished with Parmesan , if desired.
